Pumpkin Pancakes Sunday


Morning!!!!!! It is a beautiful day here in NY =) but I am home in pj's enjoying a lazy Sunday and I love it. I am enjoying the sunshine coming through the windows lol.

Eats and Workouts

Last night before bed I did All Star Workouts: Yoga with weights and burned 154 Calories.

This morning I slept in and it felt fabulous. Before breakfast, I did 25 minutes with my Kettle Bell and burned 209 Calories.

Allllll morning, well actually all weekend, I have had one thing on my mind....Pumpkin Pancakes! I mixed together Fiber One Pancake mix, Libby's Pumpkin, Pumpkin Spice, and Splenda and tried my luck. The first batch turned out delish but they broke apart when I tried to flip them. I have to perfect this recipe before next Sunday (making breakfast for my family) so I gave it another try. This time I added less water and Pumpkin and they turned out better but still not quite perfect but I am heading in the right direction. I will enjoy the left overs, tomorrow for breakfast.

I can't wait until next Sunday! I am going to make some yummy food for my familia. I won't say what, just in case my sister is reading this lol.

  6. Wow I LOVE your last comment about just doing what you want - even if it's watching movies and lounging! That is one of my hardest things - I do it - but I always feel guilty and lazy for it...hopefully this yoga thing will help me out some. And yum to the pancakes...I've been seeing alot of pancakes on blogs lately and am going to have to get me some I think :)

  9. yummy pancakes!! they look sooo good! I just made pumpkin bread last night, I just can't get enough of pumpkin! do you have a bodybugg or a device that counts your calorie burn when you do different activities??

    Have you been to Trader Joes? They have pumkin butter and thats what I put in my pancakes... or sometimes i melt some and then mix it with syrup!yummers!
