Thank You Liz!


I got the best package in the mail today. My fabulous cousin's girlfriend Liz sent me a yummy treat...Alfajores! I love these cookies.

An alfajor (Spanish pronunciation: [alfaˈxor] (Arabic الفاخر) plural alfajores) is a traditional confection that is found in some regions of Spain and in countries of Latin America including South America, Central America and Mexico. Its basic form consists of two round sweet biscuits joined together with dulce de leche or jam and covered with powdered sugar. In most alfajores there are two layers of cake, and a filling in between.

These are amazing and some what hard to find in the states so you can only imagine how happy I was when the postman handed this over to me =) THANKS LIZ (you rock)!!!!!!! Btw I may or may not have eaten quite a few of these (oops)

Eats and Workouts

Last night for din-din I was craving what I wanted to have for bfast ayer which was Pumpkin Pancakes with PB, Banana, and lite Syrup. It's good to have PB back in my house...I will never make that mistake again!

This morning I tried the Factor 5 Workout on Exercise TV. It was pretty good but I think they are only showing a few minutes of the actual workout to make us buy the dvd. I believe this tactic worked because I see myself adding this dvd to my collection. I burned 146 Calories in 20 minutes.

For breakfast I had a Green Monster made with Spinach, 1/2 a Frozen Banana, Strawberries, 1/2 scoop LMM, 1/2 a Packet of Kashi Oatmeal, and Splenda. At the gym I did the Circuit for 45 minutes and burned 387 Calories.

It was a loooooong day at the gym and by the time I got home, I was starved. I made a yummy pasta bowl with WW Pasta, Onion, Red Pepper, Mushrooms, mixed wiith Sesame Teriyaki Sauce, PB, and Chili Bean Sauce...delish as usual!

I also made some more Mini Frittatas for the week for me and my sister. This batch had 12 Egg Whites, FF Milk, Bacon, 2% Cheddar Cheese, Red Pepper, Onion, and Potato. I can't wait to have one mañana for breakfast. 

Later in the evening I dropped off my sister's Mini Frittatas and while I was there I snacked on some Halloween Candy. I was going to stay for din-din but then my dad showed up with his wife, mother in law and my two little sisters and I knew it would be awhile until din-din would be ready so I just came home. Thank God for Amy's Burrito! I was way too hungry to wait an hour for this to cook in the oven so instead I threw it in the microwave for about 5 minutes and it tasted just as good! I might start taking these to work for lunch. I paired the Burrito with a side of Pumpkin. And for dessert I had an Alfajor (or 2 or 3...double oops)

Before I go, I want to apologize to some of my fave bloggers. For some reason blogspot makes it hard for me to comment on certain blogs via my phone. I am reading your blogs but just can't comment at times... Sorry =/... I think blogspot needs to follow Wordpress's lead and start making Mobile versions of our blogs.
