Happy Hump Day!!!!!! I didn’t get the memo that we were falling back into Fall….it is brrrrrrr out here but at least it’s not raining =)
Eats and Workouts…
For Lunch I had Amy’s Cheese Enchalada with the best guacamole EVER!
And for Dessert I had a homemade Blueberry Muffin
Is it normal for my Blueberries to turn slightly green??? They taste just fine, just a little discolored…
For Din Din I made a Stir-fry with a new sauce; Archer Farms Thai Peanut Sauce…
I sautéed some Mushrooms, Brussels and Tofu in EVOO and then added the Peanut sauce. And then paired it with a Veggie Eggroll from Trader Joe’s and some Duck Sauce…YUUUUMS!
and for Dessert I had Protein Cookie Dough
I had EVERY intention to go to the gym on Tuesday morning but Koko kept me up alllllll night and I had ZERO Energy to workout. Just to tell you, I forgot my camera and itouch at home AND I poured Splenda into the trash instead of into my coffee….I was obviously sleep deprived lol
I managed to do 30 minutes of Yoga but even that was pushing it…
For Breakfast I had Kashi Oatmeal with 1 Banana, Natural Jif PB, and a sprinkle of Chocolate Light Muscle Milk
and paired it with EXTRA STRONG Cafe con Leche
For Lunch I had a Green Monster with Spinach, 1 Scoop of Chocolate Light Muscle Milk, Light Silk Soy Chocolate Milk, 1/2 a Banana, 8 Strawberries, and Splenda

and paired it with Pecans…
I had sooooooo many errands to run in the afternoon and by the time I got home I was STARVING but still wanted to make a nutritious din din…and nothing says nutrition like PAPA NAMASTE PASTA!
I made some tweaks to the sauce, I used a lot more Spinach, Garlic Powder, Parm Cheese, EVOO, and I added some chopped Pecans to it. I mixed it with some WW Penne and Mushrooms…I am so happy that my dad introduced me to this…

Today AKA Protein Day!
This morning I woke up and felt back to normal, it’s amazing what a good night of sleep can do for the body.
For Breakfast I had Oikos Caramel Yogurt with 1/2 a Scoop of Chocolate Light Muscle Milk, Banana, and Jif Natural Peanut Butter
And paired it with a cup Cafe con Leche…why is it that coffee tastes better on some days? I use the same exact ingredients but there are days that it is FANTASTIC and today was one of those days!
After I Digested, I headed out for a workout:
1 mile walk to Park
3.41 Mile Jog in the trails
- 1st mile 10:57 min/mile
- 2nd mile 10:51 min/mile
- 3rd mile 11:34 min/mile
- .41 mile 12:41 min/mile
(I was only planning to do 3 miles but I felt great and decided to push myself a little harder…)
1 mile walk back home
Stretched with and without foam roller and burned a total 929 Calories in 1 Hour and 45 Minutes.
For Lunch I made a yummy stir-fry! It basically had everything but the kitchen sink!
I sauteed Brussels, Mushroom, and Pecans, in EVOO, Hot Szechuan Sauce, Red Pepper Flakes, Soyaki Sauce, and Peanut Thai Sauce! My mouth was in FUEGO!!!!! Don’t bother asking for the recipe because I just tossed in a little bit of this and a little bit of that lol….
For Dessert I mixed 1/2 a cup of 1% Friendship Cottage Cheese with 1 scoop of Chocolate Light Muscle Milk and 2 Strawberries…if you haven’t tried Cottage Cheese with Protein Powder, you are missing out!
