Chocolate Cinnamon Apple Raisin Muffins!

Good Morning my loves!!!!! This is going to be a super quick post because I have to go to my niece’s school…I am going to chaperone a class trip to the MOMA! I can’t wait!!!!!

Eats and Workouts!

Ayer for Lunch I had a Green Monster with

  • Frozen Spinach
  • Chocolate Light Muscle Milk
  • Chocolate Light Silk Soy Milk
  • 1/2 a Frozen Banana
  • 6 Frozen Strawberries

This morning I did 30 minutes of Personal Training with Jackie Warner and burned 199 Calories

For Breakfast I am enjoying Oikos Honey Yogurt with Peanut Butter, a small Banana, and a Muffin (recipe below) and my usual Cafe con Leche. Can somebody say “YUUUMS”?!

Chocolate Cinnamon Apple and Raisins Protein Muffins

A couple of days ago Naomi posted a recipe for Cinnamon Apple Protein Muffins and I HAD to make it!

My version consisted of:

  • 3 Scoops of Chocolate Light Muscle Milk
  • 1 Cup of Oat Bran
  • 1 Cup of Applesauce
  • 1 TBSP Cinnamon
  • 1.5 TSP Baking Powder
  • .5 TSP Baking Soda
  • 1/3 cup of All Whites (Liquid Egg Whites)
  • 3 TBSP Ground Flaxseed
  • Snack Size box of Raisins

I tried to stay true to Naomi’s recipe but for some reason it was VERY thick (maybe because of the LMM) so I had to use a whole cup of Applesauce instead of 1/2 and I also used a little more egg whites…

I tossed them in the oven and baked at 350 for 25 minutes…

I enjoyed one last night for dessert with Jif Natural Peanut Butter

And just when I thought things could not get any better…Look what my supermarket is finally carrying!!!!!!

I was so excited that I actually walked to the Dairy Dept Manager and thanked him! I can not wait to try it!!!!!

Well I am off to enjoy a fabulous day at the museum except for 35 screaming kids!

  8. Oooooo, caramel's my fav flavor, so do tell how u like the new yogurt!
    You know what I like abt u Mari? (well, ONE of the many things anyway) ... u're a girl who has got to have dessert, and u always manage to make it healthy BUT also incredibly satisfying. Kudos!

  10. Oh, field trips are so fun!!!!!

    Yay for the muffins- I thought it was just me that the batter was dry. I added a little extra applesauce too thinking I measured wrong. Yours look delish :D I am making more this weekend...wooo. They are soooo good with laughing cow cheese BTW!

  14. YAY glad you liked them! the recipe calls for 1 full cup of applesauce, so I used two small containers since each one is 1/2 Cup.

    I can't wait to try it with chocoalte protein powder! i also posted a new muffin recipe on the bloggieee

    your notes look shockingly like mine. We are doing the lower leg now, which has tons of muscles. Abduction, adduction, flexion, extension...the list never ends!

  17. I'm so jealous of your trip to MoMa! I've been to the one in San Francisco and it's excellent.

    I got my Personal Training with Jackie DVD. I'm going to give it a try tomorrow am if I can wake up at 5:30am. Otherwise I'll try it tomorrow night!

  20. Everything tastes better with some PB on top! I have yet so try the caramel oikos. I can't get myself to pay so much money for such a small portion of yogurt :(
