Holy MUFFIN Batman!

Hello my loves!!!!! Before I even begin, I just want to say a quick “Gracias” to Mansana for doing such a fabulous post ayer!!!!

The last time we spoke I was heading out to Chaperone my niece’s class trip to the MOMA but when I got there…huh what the heezy, this isn't the MOMA?!?! We ended up going to Metropolitan Museum of Art!

DSCN6321

My sister told me the wrong place…I sense a conspiracy here??? She lured me under false pretense! lol

The best part (((insert sarcasm here)))) was that we got there super late and were only able to stay for about 25 minutes! Here are some of the pictures that I  snapped that are NOT blurry from walking in warp speed…  DSCN6296DSCN6284DSCN6285DSCN6287 DSCN6292 DSCN6293

Is it me or is home fries flying in this picture????

Eats and Workouts…

Wednesday

I walked to Hailey’s school before the trip, about 1.5 miles and burned 176 Calories…

After the trip, we met up with my mom and sister for a fabulous day of shopping (Deja Vu lol). We went to Traders, Tar-Jay, Mall, and Walmart…I got so many goodies including a new Hand Blender (thanks mommy!)

DSCN6346

A New Pair of Converse…

DSCN6328

I looooove Converse but my feet, not so much so what I do is get one size bigger and then insert some insoles to make them “feet friendly”

DSCN6330

While we were shopping, we went to Panera Bread for lunch, I ordered the Turkey Artichoke sammie (MY FAVE) but got Mozzarella cheese instead of Turkey…I really missed the Turkey but this tasted pretty good too =)

DSCN6325

And I paired it with the Salmon Caesar Salad….yuuuuums DSCN6323

I also had some Cinnamon Pretzel Sticks from Auntie Anne’s while we were in the Mall…

*******************************

Thursday

When I woke up I had a glass of Light Silk Chocolate Soy Milk

DSCN6332

I was dressed and ready to go to the park and when I was outside, I realized that my iTouch was dead! FAIL!!!!! I walked back inside. No itouch = No Music AND No Nike Plus = NO BUENO! Instead I did Level 1 and 2 of 30 Day Shred and Foam Roller Stretching and burned 518 Calories. A couple of people said (on twitter) that they would have gone to the park regardless but I took it as a sign…God wanted me to stay home lol…

For Breakfast I had a new favorite…CARAMEL OIKOS!!!!

DSCN6333

With the Chocolate Apple Cinnamon Protein Muffin that I made the other day

DSCN6334

And my usual Cafe con Leche

DSCN6336

For Lunch I made myself a Green Monster with Frozen Spinach, Frozen Banana, PB, 1 scoop of Light Muscle Milk, and Splenda

DSCN6337

and a Lemon Zest Luna Bar

 DSCN6338

For Din Din I made a Kick Ass Pizza!!!!!! I usually use regular Marinara Sauce but decided to give this Sauce specifically made for Pizza a try. It was all natural and only 30 calories per serving and tasted delish!

DSCN6353

I made the pizza with Trader Joe’s WW Dough, Part Skim Mozzarella, Ragu Pizza Sauce, Olives, and Mushrooms…ohhh and LOVE hahaha

 DSCN6356

***************************************

I have seen so many delish recipes on blogs for muffins and I decided to create my own!

Chocolate and Banana Protein Muffins with Chocolate Chips

1/2 Cup of Whole Wheat Flour

1/2 Cup of Oat Bran

3 Ripe Bananas

2 TBSP Ground Flax Seed

3 TBSP Chocolate Morsels

3 scoops of Chocolate Protein Powder (I used Light Muscle Milk)

1/4 cup of Egg Whites (I THINK NEXT TIME I WILL DO 1/3)

6 Packets of Splenda

1.5 TSP Baking Powder

.5 TSP Baking Soda

DSCN6344

First I mashed the Bananas…

DSCN6349

Then I tossed in the remaining Ingredients and mixed it all together with my new hand blender =)

DSCN6350

I sprayed the Muffin pan with Pam and then scooped them in…it made 7 muffins

 DSCN6351

Baked at 350 for 25 minutes..let it cool and ENJOY!

DSCN6354

I think someone has a 6th Sense! Look who came knocking on my door once the muffins were fresh out of the oven…MO!!!!!!!!

DSCN6358

And she gave them the Food Snob Seal of Approval!

I think they were a little hard which is why I will use more egg whites the next time. Bakers out there…What would you do to moisten up the muffins?

Even though they were a little tough, I still think they were delish!

DSCN6360

Each Muffin came out to 182 Calories and are packed with Fruit, Fiber, AND Protein!!!!! Oh AND FLAVOR

Thanks Mo for the surprise visit AND for the Green Bag AND Picture Frame!

DSCN6362

DSCN6364

Peekaboo I see you!

*************************************

This Morning I woke up STARVING and could not wait to eat breakfast. I enjoyed a Muffin with Honey Greek Yogurt, Peanut Butter and my usual Cafe con Leche

DSCN6366 DSCN6368

After I digested I started my workout. First I did Jillian’s Kickboxing DVD and then did some moves from “Raise the Barre”

DSCN6370

Raise the Barre is Low Weight and High Reps; I focused on Upper Body with 3lb Weights:

  • Triceps Isolation, 32 Reps
  • Triceps Kickbacks, 32 Reps
  • Pushup, 32 Reps
  • Downward Arm Extension, 32 Reps
  • Center Arm Extension, 32 Reps
  • Upward Arm Extension, 32 Reps
  • Standing Shoulder Press, 32 Reps
  • Back Fly, 32 Reps
  • Bay Back Fly, 32 Reps

I did 2 sets of these…and my arms were shaking by the end lol…I burned a total of 475 Calories.

If you are still reading this…THANK YOU! This feels like a really long post lol.

I am off to do some studying! And then heading to Mo’s tonight…we are going to make our own Sushi Rolls!!! This should be interesting haha.  I will have my camera on hand during the whole process =) so stay tuned! Do you have any fun weekend plans???

Namaste…

  3. Hey lady! Love the muffin recipes - lots of protein and fiber and chocolatey goodness!

Your pizza looks great too. Have fun tonight, no great weekend plans for me except dinner tomorrow - look for gourmet pics to come!

  4. Oh, shoot...now I have another muffin recipe I am dying to try. We all need to live closer then we can make and trade. Or have a bake 'n' bitch session- hey, it is cheaper than therapy and way more fun.

    Have fun with Mo!!!!!!

  5. I can't believe you guys only spent 25 minutes at the museum LOL. School trips are fun...but slightly ridiculous at times.

The muffins sound super tasty. I would probably add some unsweetened applesauce to them. Usually butter or oil is used to moisten but since you probably don't want to use those, applesauce should do the trick!

  6. I second applesauce for the muffins. You can also add fat-free sour cream or yogurt...my piano teacher used to do that for quick breads and they were fantastic!

  7. The muffins & "piza" look EVEN BETTER in a full size picture than they did on my phone! hehe! Racing practice starts this weekend for us. I'm packing my own healthy snacks/lunch so I don't have to rely on unhealthy track food. :)

  8. The muffins look great! I'm weird and prefer the tougher, dense muffins :) But I don't know how to fix that, but I'm sure some genius blogger/baker knows :)

I love converses and Honey Oikos, too! Lots! Tar-Jay and Traders and my 2 favorite places to blow money :)

Going to a hockey BBQ tomorrow and leaving from San Jose on Sunday for a conference. Other than that, just an 8 miler tomorrow! Have a great weekend, Mari!

  9. Hi! Love all the muffin baking and the pizza- yum!

You are a calorie burning machine!
OK- I second applesauce or pumpkin puree. It makes things less hard and totally replaces the butter!

Little lady is so cute! She WAS flying!

  10. Wait- I have more. Is Raise the Barre a book?

Oh- and I'm jealous of your sushi partay!

  11. whoop whoop! that muffin was good. I like when i listen to that instinct- something told me to surprise you and i got a surprise back. and we are making sushi! so excited!

Mickey has to clean her room for later but it wil be fun!

  12. I love the MET. That salmon caesar salad has my mouth watering! And have fun making your own sushi. I love doing this and using the little bamboo rolls!

    ReplyDelete
  13. I love that turkey artichoke sandwich so much! That and the veggie sandwich are the best things to get at Panera.

I bet the caramel oikos and the muffin paired together nicely. I've got to try that!

Try adding some greek yogurt to the muffin mix! I forgot to tell you that earlier.

  14. Those muffins look great....and easy :) Will have to try!

And I love sporadic friend pop ins...those are the best. How do they always seem to pop in when the food has just finished though? lol

  15. love the looks of those muffins!!

  16. hi, good stuff in here :)
    I wanna muffin! lol

and I have yet to eat at Panera Bread, lol

  17. MOMA! Love NYC museums, so much to explore... yes, I am a nerd. Hehe!

Even if you didn't run (totally understand, no music and no way to track time, is a little daunting), 2 levels of Jillian is impressive. Even just listening to her yell for 2 levels is awesome, haha. :)

  18. Aww, the field trip looks cute- though it is funny your sister told you the wrong place!
I haven't tried the caramel oikos yet but I really want to!

  19. yummy muffins!! too add moisture, put in some applesauce, or PUMPKIN! adds moistness and fiber too

    ReplyDelete
  20. That's really funny that you went the MET not the MOMA!

Could you use a little less flour in the muffins? Also, like everyone else said, maybe applesauce.

  21. Those muffins look delicious.. great recipe! I gotta make a pizza like that some time soon I have been craving it but too lazy to make dough.

  23. That was really nice of you anyway to go be a chaperone. I loved when my grandpa came on my school trips. I need to hit the museum here soon.

  24. I use things like sugar-free applesauce (sometimes homemade if I'm having a Martha Stewart moment), sour cream, and plain yogurt. They make everything super moist and don't really change the taste of the recipe if you're substituting.
