I don’t know what is going on with me but I have had a lingering headache for the past 2 days…I remember one time, I had a headache for almost 2 weeks and had to go to a Chiro to “crack” me so it could go bye bye…Let’s hope this one goes away on its own.
Eats and Workouts
Ayer for lunch I made myself General Tsao Tofu (w/ Mushrooms and Brussels) with Trader Joe’s sauce…
And paired it with a Veggie Egg Roll from TJ’s and a little bit of Duck sauce
I turned into bettyf*ckingcrocker ayer and ended up making Chocolate Apple and Cinnamon Protein Muffins with Raisins AND I perfected my Chocolate and Banana Protein Muffins with Chocolate Chips!
Chocolate and Banana Protein Muffins with Chocolate Chips
1/2 Cup of Whole Wheat Flour
1/2 Cup of Oat Bran
2 Ripe Bananas
1/2 cup of Apple Sauce
3 TBSP Chocolate Morsels
3 scoops of Chocolate Light Muscle Milk
1/3 cup of Egg Whites
6 Packets of Splenda
1.5 TSP Baking Powder
.5 TSP Baking Soda
Bake at 350 for 20 – 25 minutes
Makes 7 and is165 Calories per muffin,
Both Batches came out great! (I had one of each)
This morning I had a new first..YIAJ!!!!!! Oikos Caramel Yogurt with a Banana and Chocolate Protein Muffin in a PB Jar!!!!
I studied for the rest of the afternoon and enjoyed a Chocolate, Cinnamon, and Apple Protein Muffin…
For Lunch I had the final Green Monster of the Challenge!!!! It tasted amazing! Spinach, Banana, Strawberries, 1 scoop of Chocolate Light Muscle Milk, Silk Light Chocolate Soy Milk, and Splenda.
Some of you guys asked me, if I felt any different since I started the Challenge… and honestly I feel great! I have a lot more energy when I have them… usually after lunch I am sluggish but whenever I had a GM, it was an instant pick me up! Just because the challenge is over, doesn’t mean I will stop having these.
For din din I wanted to try a new Frozen Dish; Trader Joe’s Roasted Vegetable and Multi Grain Lasagna.
Usually the picture on the box is far prettier than what is actually in the box but this wasn’t so ugly, it actually looked pretty tasty….
I wanted to cook it in the oven but it said for best results, heat it up in the microwave…it looked even better once it was cooked…
There are 4 servings in the tray but I made it into three (each one was 347 Calories). If you are in TJ’s, I definitely recommend this!
For dessert I had Yoplait Light Fat Free Orange Creme (sorry Gina, I brought these before our talk)
I thought this was the end of my eats for the day but I got really REALLY hungry after 7ish and had 3 bowls of Peanut Butter Puffins in FF Milk..not the best choice but for some reason, the day AFTER I have a hard workout, I get famished! I COULD have lied and said I had 1 bowl or some crap like that…but this blog is about honesty and sometimes I happen to fall into a box of Cereal! I am not perfect…I am a work in progress =)
