What Have You Done Today…

Hello my loves! I hope you guys are having a great start to your week =). I have had a busy morning which started at 4:30 am for an IntenSati class…but let’s start off where we left off.

Friday afternoon I decided to try a Falafel mix that I picked up…

All I had to do was mix it with water and let it sit for 10 minutes…easy enough

I also got these new pans which I could not wait to try out…btw these babies were only 10 bucks for the whole set at Bed Bath & Beyond!

After 10 minutes, I rolled them into little balls and tossed them in the oven for 20 minutes and (flipped them half way through).

I paired them with a Whole Wheat Pita, Cracked Red Pepper Hummus, Reduced Fat Feta, Lettuce, and Tomatoes…

They were a little too strong for my taste buds…I ended up tossing the rest of the box out…I honestly think the black bean burgers that I make, taste better than this.

I am still in search for the mix that Gina recommended, I think it was called “Fantastic”.

I also snacked on 2 Chocolate and Banana protein muffins later in the evening (not pictured, battery was charging)

Saturday morning, I was rushing to get ready for the Pantry so I had a quick breakfast; Chocolate and Banana Protein Muffin with my usual (iced) Cafe con Leche

I stopped volunteering a little early because I signed my niece up for a Bike Riding Class! My mom picked me up around 9:30ish and then we went to get my sister and homefries.

When we arrived at the park, they removed her training wheels and pedals. They teach them how to walk and balance on their bike before they put the pedals back on.

I would love to tell you guys that she learned to ride her bike but unfortunately she didn’t…I asked one of the volunteers if all of the kids get it on their first try and he said “nope” so I didn’t feel so bad. Actually I am very proud of her…even though she did not learn…she did NOT give up! and did NOT have a meltdown, temper tantrum, etc. like some of the other kids. One little girl actually threw her bike in rage and said “IT IS TIME FOR US TO GO HOME! I AM DONE!”

After the park, I came home for lunch…I basically had the same thing from the day before but I replaced the Falafel with my Black Bean Burger.

Confession Time (1)…For din din I had Target Lemon and White Chocolate Shortbread cookies

On Sunday my plan was to go to an IntenSati class but my stomach was killing me, perhaps from all the cookies that I consumed the night before…I decided to skip the class =/

For Breakfast I made a Green Monster with Spinach, Blueberries, Chocolate LMM, FF Milk, and Splenda

For Lunch I had Lettuce, Tomato, 2 crumbled Black Bean Burgers, Reduced Fat Feta, and Cracked Red Pepper Hummus

Confession Time (2)…for din din I had Skinny Cow Ice cream…it was only 400 calories but obviously not the best dinner lol

All was NOT lost…I decided to do my IntenSati DVD since I didn’t make it to the class…it is not the same as being in the actual class but it was still good =)

This morning I woke up even before my alarm went off at 4:30…I was up by 4:20 reading emails. I showered, got dressed, and drank some coffee to wake myself up. I then headed to the Equinox by Columbus Circle for IntenSati. This is the first time that I took Darby’s class and it was a lot of fun. She started the class with the song “she’s a brick house” and that got my butt swaying lol. She even had us do the “Soul Train” line which sort of freaked me out because I am VERY shy but we got to go down the middle with a partner and everyone was clapping and cheering us on while we ran down; giving us high fives! I am sure we looked like idiots to the other people in the gym but I was in the moment lol. My favorite part of the class was the ending when we did stretching and she played the song from Biggest Loser “What have you done today to make you feel proud?” I think getting up at the crack of dawn to have a great workout is something to be proud of =) What have you done today to make YOU feel proud?

After class, I ran to the supermarket and then rushed home to do laundry.

I then cooked black beans to make some burgers…I enjoyed one for lunch with Part Skim String Cheese, Lettuce, slice of Tomato, Mayo and Ketchup Mix, in a Nature’s Pride Bun

I got my first birthday gift in the mail today from my friend Kim!!!!!

She sent me my first Vegetarian Cookbook!!!!!!

Until I looked close enough…it’s a Micro Scraper…this is perfect to scrape my PB JARS!

So today I am meeting a friend for din din that I have not seen in about 4 years…We had a falling out a few years back and stopped talking which sucked because we were friends since the 8th grade =/ She recently found my website and emailed me which caught me off guard because we did not leave things in the best of terms. We have been chatting via email for a couple of months and honestly it great to reconnect with her again…but I have to admit that I am a little nervous about tonight. Thankfully we are going to 5 Burros so the drinks will be flowing! haha

Have you ever had a falling out with a friend and reconnected again after a couple of years?

  2. in my experience, all that drama withers away with age. I have had a falling out with some close friends and when we hang out again all that drama is gone. and if drinks are flowing then all is right in the world.
    I was at 5 burro on saturday and i discovered something WONDERFUL! THE 3 taco deal? you know the one... did you know you can get a different filling for each one of the tacos??? yep thats why i ordered one lobster, one shrimp and one steak. of course the lobster was the bst one! LOL

  3. Ah, that stinks about the falafel, that's actually my favorite mix! But the Fantastic Foods is good too. I hate to say this, normally I wouldn't, but frying it tastes so much better, lol.

    I love the Purple Monster :)

    I have reconnected with friends after years of separation and not on the best of terms. When you see each other, you will only remember the good times and all the rest will fade away. Time heals all wounds and like Ms. Mo said, "drama withers away with age." It's true! I hope you have a good time :)

  7. So many things to say here!
    First, your falafel mix looks REALLY similar to the Fantastic brand. The fantastic brand was a little darker, maybe, but overall very similar I think. Delicious.

    Riding a two wheeler is so hard, but I'm going to brag here....I learned when I was THREE! Yeah. I am SUCH a slow learner when it comes to anything else, but for some reason I was GREAT at riding a bike! I love telling people that, I'm so proud. haha. Your niece looks adorable on her bike. She'll get it soon, and good for her for NOT giving up. That's huge.

    I had a falling out with a friend this year, actually, and I hope to reconnect sometime, but I'm leaving it up to her. I doubt it will happen, but she was in the wrong and I refuse to talk to her until she apologizes! If she doesn't, oh well.

  10. homamde falafel is the way to go! I havent found a mix that is THAT good...seriously it is so so so good when you make it yourself!!! no more mixessss :)

    aww so cute of homefries riding a bike! she will get there soon! i remember remembering how to ride!

    That was so nice of you to take your niece to the class! It can definitely take a while to figure it out, but once you do, you're set for life. Good luck to your niece! I bet she's gonna be awesome at the next class.

    I hope you have fun with your friend and that is calming and not stressful. I have had falling outs with two friends. One of which got totally fixed and we are still really close, another of which can never really be fixed but we are still friends, just not "best."

    I didn't have a "falling out" with a particular friend, but I did recently reconnect with a friend I had fallen out of touch with.

  13. I think you should just make homemade falafel from scratch. They are so easy and all you need is canned chickpeas and some herbs!

    I love how dedicated you are to IntenSati. you are a total rock star.

    I had a falling out with a friend back when I was just getting over my ED and she refused to start eating normally again. It was really hard but I just had to cut her out of my life. I think about her a fair amount now. I don't know if we'll ever reconnect, but I hope so!

  14. Whoa lots of stuff here! Bummer about that falafel, it looks really good paired up with that hummus. I love your directing traffic with your niece and cant believe some little girl flipped out like that! If my kid (knock on wood that never happens) ever behaved that way, they would not know what was coming to them!

    I want your purple monster and the pb scraper, even though I dont like pb, I think it's a cool gadget. Thats awesome about the friend, I've reconnected with some friends who Ive lost touch with and most of them have turned out good in the long run and we dont even remember why we stopped talking (b/c it was probably too trivial of an issue looking back). There are some friends who I have broken up with and try to reconnect with me but I ignore them b/c their negativity was the reason why I didnt feel like we could be friends anymore but I think its cool she (or he) found your website and yall are gonna meet up. Ummm....I thought this was going to be a short comment but it turned out kinda long---sorry!
