Pumpkin Muffins With Cream Cheese Filling Recipe…

I have not blogged on a Saturday in such a long time but I just had to post this recipe ASAP! It is THAT good! But you just have to wait a little longer…

Ayer I was craving chili cheese fries and I was so happy when I came across this at Target the other day….

Amy’s Organic Spicy Chili

This was exactly what I needed to create this yummy din din! Spicy Sweet Potato Fries with Amy’s Chili and 2% Cheddar Cheese.

Amy can do no wrong in my eyes! and it has nothing to do with the fact that my middle name is Ayme (pronounced Amy) lol.

After din din, I got dressed and then headed to the bar….I had such an amazing time!

Before heading to the bar, Missy told me about a great drink…Vodka with Water and Crystal Light! I packed my own crystal light lol. This is my favorite drink!!!!!

We had such an amazing time! we stayed at the bar until 3 in the morning and we came to the conclusion that this is officially our new hangout spot!!! great music, fabulous drinks, and amazing service…oh and close enough to home!

A normal person would stay in bed until noon after a long night of drinking but normal is not something that I claim to be. Instead I chose to wake up at 9 in the morning and start baking.  One of the best things about being a blogger is finding new recipes. The other day, the fabulous (and hilarious) Julie posted this recipe on her page and just HAD to make it!

2 ingredient pumpkin recipe

  • 1 15oz can of 100% canned pumpkin
  • 1 box spice cake mix

spray 2 12 cup muffin tins with nonstick spray. in a large bowl combine the canned pumpkin and spice cake. beat on medium with an electric beater & drop by the spoonfuls into the muffin tins. bake at 350 for about 10-15 minutes!

Pumpkin Muffins with just two ingredients? get out of here! I had to text her just to make sure she was not lying lol. She assured me that it would work so I took my butt to the store to get everything that I needed but then my sister said “Hey why don’t you make them with Cream Cheese?” OKAY!

I got everything I needed to make Pumpkin Muffins with Cream Cheese Filling

  • 1 Can of Libby’s (I couldn’t find 15oz can so instead I got the big one and measured it out)
  • Spice Cake Mix
  • 8 ounces of Reduced Fat Cream Cheese
  • Vanilla Extract
  • Splenda

First I combined the Pumpkin and the Cake Mix

I then combined the cream cheese with Splenda and Vanilla Extract (to taste)

I sprayed the Baking Cups with Pam and then filled them halfway with the Pumpkin Mixture and then added the cream cheese.

And then filled it with more of the Pumpkin Mixture…

I popped them in the oven for 25 minutes at 350…Fresh out of the oven.

(12 muffins and 240 calories each)

These were AMAZING! My sister slept over last night and enjoyed them with me this morning and she was so impressed! She even said that they were better than Starbucks! WOAH WHAT!?!? I also sent some to my mom and homefries and they also loved it! I am planning to make these for Thanksgiving…they kick pumpkin pie’s culo!

I enjoyed one for breakfast with my usual cafe con leche…this is just what I needed to cure my hangover ha.
