A Change is Coming…

 

Back in 2010 I decided to give up meat for Lent…after Lent was over I continued the journey and still didn’t go back to eating meat (except for seafood) and I felt great about it. After a while, I sort of lost my identity…I was no longer Mariette, I was Mariette the vegetarian and I felt a lot of pressure from it. I was always reminded by my choice…One example, at my job we have a board where we keep track of our monthly sessions and instead of using our names, we use nicknames and of course mine is “The Veggie Diva”. I have been struggling with this lifestyle for quite some time and even questioned my decision last May.

About a couple of months ago, I started to do vegetarian Paleo and I saw some great results but then I got bored with eating a lot of the same things so I lost focus. I remember being at my “happy weight” when I was a carnivore and I think one of the main reasons for this was because I do have PCOS and low carb “diet” is very beneficial for women who struggle with this because it helps with our Insulin levels.

I am a true believer that people come into your life for a reason, and I have been reminded of this once again. I recently started talking to Amber and she also was a vegetarian for about a year and decided that this was not the right decision for her body. She spoke to me about her transition and has given me some great advice.

So with that said, I have made the decision to eat meat once again. It was an emotional rollercoaster and I thought LONG AND HARD before finally coming to this decision..I know that this is the right decision for me, now.  However I want to be smart about this. I don’t want to put junk into my body and still want to make good choices (whenever I can).

Today I went to Trader Joes and purchased organic free range chicken breast…

I also picked this up to marinade it for a few hours…

I decided that the best option would be to grill it; I actually forgot how to cook chicken, so I googled “How do you grill chicken” oops.

I paired one piece with Spinach sautéed in coconut oil, minced garlic, and cayenne pepper.

I have to say, this tasted pretty good and can’t wait to have leftovers for din din!

I am done with labels…I am just Mariette and this morning I asked my boss to erase “The Veggie Diva” and replace it with “Namaste Mari”!
