A couple of weeks ago, my friend Angie came over for a girls night and she made the most delicious Pumpkin Protein Bars so of course I needed the recipe. I tweaked it a bit based on what I had at home but it tastes just as delicious and I hope you enjoy it
Pumpkin
Protein Bars
Ingredients:
- 1 15 oz Can of Libby’s Pumpkin
- 1/4 Cup Egg Whites
- 1 ½ Cups of Old Fashioned Oats
- 2 Scoops Optimum Nutrition Vanilla Ice Cream Protein Powder
- ¼ Cup Unsweetened Vanilla Almond Milk
- 1 TSP Pure Vanilla Extract
- 10 Packets of Truvia
- 1 TBSP Pumpkin Pie Spice
- 1 TBSP I Can’t Believe It’s Not Butter (softened)
- 1 TSP Baking Powder
- ½ TSP Baking Soda
· Directions:
1. Preheat oven to 350°F and line an 8x8 pan with
parchment paper, sprayed with cooking spray.
2. Blend oatmeal to make it into oatmeal flour
(easily done in Nutribullet)
3. In a large bowl mix together all the
ingredients
4. Pour the batter into the pan and bake about
35-40 minutes.
5. Let it cool before cutting into slices
Macro Breakdown
I love crumbling it up and mixing it into
my yogurt or enjoying a slice with some peanut butter (we had it with ice cream too and sooo good!!)
